One Pot Corn Spaghetti

I wouldn’t call this a real cooking, if you have ever cooked maggi noodles in your life, this one pot spaghetti is a big sister of maggi. As the name suggests put everything in a big pan, let it cook for sometime add some sauce of your choice and there you have a healthy, easy and yummy dish ready in few minutes..

This one pot spaghetti doesn’t need constant stirring, taste checking, fear of having the vegetables stuck and being burnt in the pan. It is more like an empty canvas and you get to draw whatever you want, in this case the canvas is the pan and the painting and design are the choice of ingredients you chose to go into the pan.

This one pot spaghetti is a saver for all working moms when looking to pack a quick lunch for work or just cook it on the those extra busy weekday for dinner. Just because there are less strokes do not undermine this dish, it doesn’t have any cheese but the corn sauce added at the end adds all the needed creamy flavour and when topped with some grilled mushrooms and cherry tomatoes it in deed is a wholesome meal loaded with all the freshness.

Time: 20-30 minutes

Ingredients for spaghetti:

2 handful measures of Spaghetti

1.5 tbspn of olive oil

5-6 garlic cloves, finely chopped

1 onion

1 tomato

1/4 cup of sweet corn, boiled

1 small carrot

3-4 beans

1/2 cup chopped spinach

100 gms button mushrooms

1/2 capsicum(green pepper)

salt to taste

water to boil spaghetti

1/2 tspn pepper powder

Corn Sauce:

1/2 cup of boiled sweet corn

Method:

  1. In a big pan, add all the ingredients listed under spaghetti, add enough water needed and let it cook till the spaghetti is al dente.
  2. In the mean time, grind the boiled sweet corn into a smooth paste, adding enough water to obtain saucy consistency.
  3. Add in the sauce, pepper powder and cook till the sauce has reduced and spaghetti is well cooked.
  4. Garnish with grilled cherry tomatoes and mushroom, for this bake the vegetables in pre heated oven at 180C for 15 minutes with some olive oil and pepper.spaghetti_pic3

Now as i mentioned isn’t this an easy dish, go get you hands clean and paint that empty canvas.
